- - 40g d’huile de pépin de raisin
- - 100g de pralin

Les étapes de préparation
Ganache au chocolat
- Faire fondre le chocolat avec la crème liquide, mélanger. Lorsque le mélange est bien homogène ajouter le beurre et mélanger à nouveau. Réserver au réfrigérateur jusqu’à ce que cela devienne comme une pâte à tartiner facile à étaler.
Biscuit roulé
- parer les blancs des jaunes, battre les jaunes avec le sucre en poudre jusqu’au ce que le mélange blanchisse. Monter les blancs en neige au batteur, ajouter maintenant une cuillère à la préparation jaune/sucre mélanger pour détendre la pâte. Ajoutez le reste des blancs délicatement à la maryse, mettre la farine tamisée et la poudre de noisette et mélanger. Verser la pâte dans un moule à génoise ou bien sûr une plaque recouverte d’un papier cuisson. Cuire à 180°C pendant 10 min. Après cela démouler la pâte encore chaude sur un torchon mouillé et essoré. Couper la pâte au 3/4 un côté servira pour le biscuit rouler l’autre pour la semelle de la bûche vous pouvez la réserver. Rouler le biscuit dans le torchon humide ainsi il ne se cassera pas au moment de le rouler. Maintenant votre ganache a une bonne texture vous pouvez donc l’étaler dans le biscuit puis le rouler bien serrer. Enrouler dans un film étirable et placer le au congélateur.
Mousse au chocolat
- Faire ramollir la gélatine dans un bol d’eau froide pendant 10 min. Faire fondre le chocolat avec les 150g de crème liquide, ajouter la gélatine essorée entre vos mains. Mélanger et laisser refroidir. Dans le bol du batteur mettre les 400g de crème liquide bien froide puis monter là en chantilly. Ajouter le mélange de chocolat mélanger délicatement. Dans votre moule à bûche gouttière, mettre la moitié et de la mousse au chocolat étaler bien partout. Vous pouvez mettre le biscuit roulé congelé au centre et l’enfoncer un peu, recouvrer avec le reste de mousse au chocolat. Poser par-dessus le rectangle de biscuit. Mettre le tout au congélateur une nuit dans l’idéale.
Glaçage rocher au dulcey
- u bain marie faire fondre le chocolat avec l’huile, ajoutez le pralin et mélanger. Verser le glaçage sur la bûche glacée lorsque le mélange est à 35 degrés. Placer la bûche au réfrigérateur 3 heures minimum le temps que la bûche décongèle.
