Les coques
- Tamiser le sucre glace et la poudre d’amande puis les mettre ensemble dans un saladier. Monter les blancs en neige avec une pincée de sel, ajouter ensuite le sucre en poudre et battre à nouveau 2 mn afin d’obtenir une meringue. Vous pouvez maintenant ajouter ou non le colorant bleu selon les envies. Ajouter la poudre d’amande et sucre glace sur la meringue, à l’aide de la Maryse mélanger délicatement, puis « macaroner » la préparation rabatte la préparation sur elle même en l’écrasant sur la paroi du bol. La pâte doit devenir brillante et réaliser un ruban. Verser le tout dans une poche à douille, puis sur le tapis à macarons former vos œufs. Tapoter votre plaque légèrement pour faire échapper les petites bulles. Cuire dans un four préchauffer à 140°C pendant 12 min. Laisser refroidir avant de les décoller.
Ganache
- Faites chauffer votre crème avec le chocolat puis mélanger. Placer le dans une poche à douille et laisser au frais. Pendant ce temps, mélanger un peu de colorant marron avec 2-3 gouttes d'eau puis à l'aide d'un pinceau éclabousser vos coques de macarons. Garnir vos macarons de ganache et remettre une coque dessus puis les conserver a frais.
