- - 45g sucre glace

Brownie choco/ cacahuète
- - 2 œufs
- - 90 sucre
- - 45g sucre muscovado
- - 90g de beurre
- - 25g de farine
- - 12g de cacao
- - 90g de chocolat noir
- - 1 pincée de sel
- - 60gr cacahuète caramélisées
- - 1 CS d'arôme vanille
Ganache montée chocolat
- - 43g de chocolat noir
- - 43g de chocolat au lait
- - 87g de crème liquide entière
- - 9g de miel
- - 9g de glucose
- - 179g de crème liquide entière froide
Glaçage miroir chocolat
- - 100g d'eau
- - 165g de sucre
- - 35g de glucose
- - 100g de crème liquide entière
- - 150g de chocolat au lait
- - 9g de gélatine
La préparation
Pâte sucrée cacao
- Mélanger le beurre, le sucre, la poudre d’amande, la farine, le cacao et le sel à la feuille. Ajouter ensuite les œufs. Ne pas trop mélanger. Filmer et laisser 2 heures au frigo. Foncer vos cercles, mettre au frigo 30mn minimum et enfourner 10mn à 170°C.
Brownie choco/ cacahuète
- Fouetter les œufs, le sucre et la vanille. Faire fondre le chocolat et le beurre. Mélanger le tout puis ajouter la farine et le cacao. Ajouter les cacahuètes hachées et le sel. Verser sur les fonds de tarte précuits jusqu’aux 2/3 et enfourner 18mn à 170°C.
Ganache montée chocolat
- Faire fondre les chocolats. Faire chauffer les 87g de crème avec le miel et le glucose. Quand le mélange est à ébullition, le verser sur les chocolats en 3 fois. Ajouter la crème froide et garder 8h minimum au frigo. Monter la ganache et la mouler dans la partie supérieure du moule (moule tartelette klassik). Placer au congélateur.
Glaçage miroir chocolat
- Réhydrater la gélatine dans de l’eau froide. Faire chauffer la crème. Faire chauffer l’eau, le sucre et le glucose jusqu’à 103°C. Ajouter ensuite la crème chaude puis la gélatine. Utiliser le glaçage à 29°C/30°C sur les disques de ganache encore gelés. Poser les disques glaces sur les fonds de tartelettes. Décorer avec des disques de chocolat, cacahuètes et du cara à la banane.
