Tarte citron meringuée

Une recette simple et délicieuse de la tarte au citron meringuée réalisé par @chouquette2904 !

Ce qu'il vous faudra (avec un fond de tarte pâtissier)

Ingredients :

Jus de citron pressé

200ml

Sucre

380g

Œufs

4

Beurre

200g

Blancs d'oeufs

3

Eau

30g

Les étapes de préparation

Crème au citron

  • Faire chauffer le jus de citron pressé, le sucre et les œufs. Quand épaississement, retirer du feu et ajouter le beurre. Couler sur le fond de tarte et placer au frais pour que la crème fige. 

Meringue italienne

  • Commencer par faire bouillir l’eau et le sucre. Quand vous êtes aux environs de 114°C, commencer à fouetter les blancs en neige. Dès que le sucre atteint les 118°C, versez-le sur les blancs, sans cesser de fouetter pendant 5 min environ jusqu’à ce que la meringue redescende en température à environ 50 degrés. Mettre en poche et pocher sur votre crème citron prise au froid.
