Pour 90 macarons de 3cm de diamètre, il vous faudra :
Ingredients :
Macaron Ancel ou préparation macaron FunCakes
500gr
Eau
190gr
Crème liquide à 35% MG
1kg
20gr
20gr
La préparation
Coques de macarons bicolores
- Porter l’eau et le colorant rouge à ébullition, verser sur la préparation pour macarons puis au batteur, à l’aide de la feuille, battre 5mn à grande vitesse. Réitérer ces opérations avec l’eau, la préparation pour macarons et le colorant jaune. Débarrasser chacune des préparations colorées dans une poche à douille et mettre les deux poches dans une troisième poche munie d’une douille unie. Dresser des coques de macarons de 2 à 3cm de diamètre sur une plaque recouverte d’un tapis de cuisson. Laisser reposer environ 30mn puis cuire sur plaque doublée à 130°C environ 15mn en four ventilé tirage ouvert ou 25mn en four à sole tirage ouvert. Décoller après complet refroidissement.
Crémeux foisonné framboise
- Dans une casserole, porter la crème et l’arôme à ébullition. Retirer la casserole du feu, ajouter la préparation pour crémeux au mélange bouillant de crème et d’arôme puis mélanger au mixeur plongeant jusqu’à obtention d’une préparation homogène. Débarrasser, filmer au contact puis réserver au frigo.
Crémeux foisonné citron
- Dans une casserole, porter la crème et l’arôme à ébullition. Retirer la casserole du feu, ajouter la préparation pour crémeux au mélange bouillant de crème et d’arôme puis mélanger au mixeur plongeant jusqu’à obtention d’une préparation homogène. Débarrasser, filmer au contact puis réserver au frigo.
La réalisation
- Au batteur à l’aide du fouet, foisonner les crémeux quelques secondes à grande vitesse jusqu’à l’obtention d’une consistance pouvant se dresser à la poche. Débarrasser chaque crémeux dans une poche à douille et mettre les deux poches dans une troisième poche munie d’une douille unie. Garnir les coques de macarons du double crémeux foisonné puis stocker au frais.
